In my experience, there are only very few times when I encountered art dissertation projects. Maybe this is due to the fact that art is very difficult to express and that it relative. However, there are still some important things that we can acquire when writing an art dissertation and most of them do not even relate to the subject itself.
A dissertation aims to provide the readers and the writers new sets of knowledge. It is like the evidence of a research process in written form. The main goal of researching is to come up with a study result that will be extracted form other referenced materials or from actual experiments. An art dissertation primarily discusses things that are of course related to art. However, there are also some instances in which you can write such a dissertation without having to concentrate mainly on the domains of art as a subject field. Since you will not delve into the topics that are conventionally related to art, then you can capture more readers and probably discover new information about different subjects.
